The Bikini Cocktail

Serves 10 servings

To make the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Cocktail (makes 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing

Directions

To prepare the Citrus Syrup: Combine all the components into a pot, heat until it reaches a light boil, stirring until the sugar dissolves. Then, turn off the burner and leave to reach room temperature completely. Transfer to a clean bottle, seal and store chilled, it can be stored for up to four weeks.

Preparing the Premix: Mix the specified liquids into one sizeable container, leave to sit for an hour, then filter it best through cheesecloth, making it completely strained.

For serving: Add 85ml from the cocktail base to a stirring glass filled with ice, and agitate gently for one minute to chill. Strain into a cold coupe glass or equivalent, decorate with some cranberries adding the final touch using a brief mist with the mandarin essence over the top.
